Sounds like we're talkin Actual Cash Value. That means what a willing buyer
would pay for a trailer of like kind and quality.
I would do as Hunter says, research the internet for refurbed Airstreams of
the same year, make and model. Find out what they are selling for. Make
copies of each example.
Go to a website like RV Trader and find out what Airstreams of the same year
make and model are selling for. Make copies of each example.
Research any other listing service like Ebay, Craigs List etc and make
copies of each example.
Dig out all your bills for the stuff you've added to your Airstream. Figure
out what time you've spent refurbishing your Airstream. Make copies of the
bills and give the adjuster a statement of the time you've spent times a
reasonable allowance for your time --- $/hour. Figure out how much more your
Airstream was worth above the average.
Take all the above and put it in front of the adjuster. Ask to see his
research so you can show him where his average price differs from your
research.
Don't take his first offer.
Have a reasonable figure to propose as a first counter offer.
Have a figure in mind that you would settle for willingly
Have a figure in mind you would accept as a last ditch position.
Remember an adjuster is working for the insurance company, not you. He has
to sell his settlement to the insurance company so it has to be reasonable.
Remember he has 50 other cases he wants to get to. He is not paid on a
percentage of what he settles for. He is paid to get thing settled fairly
and in a reasonable time frame. Most of them just want to get on to the next
case, get done and go fishing.

I would do a search of sold Airstreams...all over the internet,
including ebay.....
Find the ones most like yours, the most expensive ones.... and give them
the sales prices.
I'm so sorry about your trailer, but delighted that you your family and
dogs are okay.
Do you know what happened, so we can learn from your misfortune?
