Zerk fittings are also called "grease nipples". You hook up a grease
gun on these fittings. They're hollow and the little bearing on the
end moves when pressure is applied (in when the grease gun is pushing
grease into the fitting and back out to seal out grime when the grease
gun's removed).

In a nutshell, they're an "apply grease here" item that allows
hard-to-reach items to be lubricated.
