Is your new cooktop remain gas?

The solution of flexible connections sounds like a good one.
You would need to be sure to do leak checks on your joints and fasten the pipes/tubing against bouncing around when you are on the road.
The other solution is to shorten the copper tubing the number of inches to get valve, and regulator all lined up. Any good handy man has tubing cutters and a flare tool to make a proper connection. Again just be sure the joints are leak tested.
