Some of the state parks we stay at have "Dishwater Drains" alongside the road where you can run a water hose and empty your dish/shower water. I notice a lot of people using it too.

Did you mean to type "not"? In my 12 years of fulltiming, and 48
states, I have found it to be illegal most places to dump gray water on
the ground.
You certainly can't, and shouldn't, in campgrounds.
I see no reason not to on your own property, but other than that its a
no no.
