As long as everything is secure- lids on, zip locks zipped, etc. there should be no problem. Just make sure it is closed and latched properly before rolling down the road. The 3-ways have a pin for this purpose and the 12V's have a latch that will stay put.

The only caution I might offer in 48,000 miles of travel with the 12V is to be sure that the latch closes the first time you reach any kind of altitude- say over 5-6,000ft. I found that the gasket around the door expends a bit and the door just doesn't always close and latch when you swing it shut. Stopping for a breather on an 11,000ft Colorado pass I was compelled to give a tour. I was a bit embarassed to find the newly purchased contents of the fridge all over the the interior and the fridge door flapping wide open. Nothing spilled (or spoiled- just came from the market) because I'm anal about the lid/zip thing and the cause was easily diagnosed at that altitude. Don't know if you will find this to be true of the 3-way. Just be sure it's shut!
