We use an HP 7510 all-in-one. It is an wifi printer that also supports e-print (apple airprint) directly from all apple devices that support such (we use it from 2 iphones (4S and 4), an ipad 2 and a macbook pro. The printer does automatic duplex printing, has an internal 125 sheet paper tray, an separate internal tray for 20 sheets of 4X6 photo paper, individual color cartridges (yellow, blue, cyan, photo black & print black) and an automatic document feeder (it unfortunately does not support duplex feeding). It has a wonderful 4X6 color display touch control panel (ie easy to read and operate from printer). It costs under $150 (check around you may find it for less). The cartridges run $19.95 each for the standard capacity, or $24.95 for the XL size (3X the ink). SInce each cartridge is separate, you only have to replace the cartridge that you use the most. It is energy star compliant (49W Max, 8W standby).
Be sure that any printer you choose support the apple airprint standard. HP developed much of the technology and I am not sure if there are ANY other manufacturers that have released printers that work with the ipad and iphone (they ONLY print using airprint). A wireless printer (ie wifi) printer will work with your mac, but will NOT connect to your iphone and ipad.
The HP7510 does support faxing, but it is not via a phoneline. HP teamed up with a third party to offer web based faxing. It works well and for occasional faxing is free (20 pages a month a think). But you have NO choice but to use the third party service.
The printer does require 120VAC to operate, but a small inverter (150W) would work just fine for those situations were you are off the grid. As for traveling, I would get some high density foam about 2" thick to sit it on. As you plan to store it a cabinet, I would put some foam at the top to prevent it bouncing up against the shelf or whatever above it.
As for a new computer, you really should look into the MacBook Air. Our daughter uses the 13" MBA and absolutely loves it. She switched from a 15" MBP and has never regretted the move. The MBA is super light and the screen is wonderful. There is a lot of rumor that Apple is going to release either a 15" MBA or a redesigned 15" MBP along the lines of a MBA. If I was in the market for a new Mac, I would wait for a bit as Apple will be releasing new computers within the next 60-90 days (most likely an April announcement). The new computers will feature the next gen Intel Ivy Bridge processors for better battery life and higher performance. It is also rumored that the new Mac will feature a new high-resolution display along the lines of the recently released ipad.
