One other factor to consider when looking for another water pump is
current draw. As I understand your plan use you will be dry camping
quite a bit. The lowest current draw pump that gets the job done should
be the one to look for.

Another remote possibility for your mystery leak could be a crack in the
water tank fill hose. The leak would show up if the tank was overfilled
or after a trip with a full or near full tank.
