I don't think there is any easy way. The carpet was put down first then the cabinetry was installed on top of it. The carpet is stretched on tack strips along the walls which are under the cabinets. And if it's wet it really should be removed. If you can reach the carpet through the bottom of the cabinet maybe you could pull it up and cut it off around the edges?
