YES, Airstream has been using 12 gauge wiring for many, many years. Again, I have a 99, 34ft and an 02, 19ft, as well as exposure to many much older vintages and the heavier wiring is just the way Airstream does it.

As to whether the Aquajet RV series is overkill is a matter of use. The cost between the ES and RV series is very minimal and the difference resides in the ability to use more than a single faucet without any loss of pressure or volume. It is illuminating that Airstream chose to install the RV series as standard in our 2002 19ft Bambi LS. Both series are variable speed, 5 chamber pumps. The only difference is the pump motor itself, which is more powerful (higher torque, higher top end speed) in the RV series, otherwise the pumps are identical. I can also add that during my tenure managing the AIrstream dealership, we replaced quite a few of the Shurflo pumps with the AquaJet for reasons totally related to noise. Swapping the Shurflo that came in our 99, 34fter with the RV series AquaJet resulted in a huge decrease in noise and pulsation. When they say that the AquaJet is just like at home, they mean it. Of course if these factors are not of value to you, then the added cost is a waste of money.

BTW, Atwood no longer has the electric switch on the back. Now the electric element is controlled by the water heater circuit board. My 99 34ft originally came with the design that Steve mentioned, but when I replaced it, the replacement was the new design. Atwood intended that the switch at the back of the water heater be used as a master cutoff with an remote switch located at a more convenient location be used to switch the 120VAC to the electric element (that is how Airstream did our 34ft originally).
