Going south to Arizona, I15 is a whole lot closer to you than I25, so I would think Idaho/Utah would be the shorter trip on questionable roads. The interstate should be good whichever way you go, keeping in mind that I25 through Denver and C. Springs can very quickly get snowed in, and those drivers just don't know what to do in first or second snowfalls, lol. If you go through Idaho and Utah, then you will be going down the west side of the big mountains (Sangres) and should be fine, depending on how late you put it off. Twas me, I would be on my way to Southern Cali or Ariz about now.
